Fall 2006: Bati Making; Shikshantar; Udaipur, Rajasthan



Bati is a Rajasthani food that is often served covered in dal (dal bati).  They resemble dumplings you might find in a midwestern US version of chicken and dumplings, only they are not cooked in liquid, let alone found mixed up with chicken.  Instead, the version we made at Shikshantar was prepared outdoors the traditional way.  While the turmeric-died dough was prepared inside, Manoj went on a hunt for dried cow dung "cakes"  which would become the fuel source to cook the bati.
